Elm Oyster mushrooms, or Hypsizygus ulmarius, can be found up on the trunks and large branches of elm trees, as well as other broadleaf hardwood trees such as oak, cottonwood, maple, and willow. Foragers will find these mushrooms in clusters with large pale caps and bent stems.
Its name is a bit misleading because it is actually not part of the oyster mushroom family, but has been touted as more delicious than oyster mushrooms!

Mushroom Strain Origin
The Elm Oyster mushroom, less commonly known as the Popham Elm Oyster, is classified as Pleurotus ulmarius, however, another Elm Oyster has been classified by Canadian mycologist Scott Redhead as Hypsizygus ulmarius, which can be confused with its Pleurotus cousin.
