About The Recipe

Look no further for a quick, easy, and very tasty stir fry dish! Your choice of Shiitake, Oyster, or Enoki mushrooms, along with broccoli, red pepper, onion, minced garlic, and sesame seeds make this dinner a family favorite.

While all three mushroom varieties go great with this recipe, each mushroom will have its own cooking time. Enoki will have a shorter cooking time than both the Shiitake and Oyster.

Ingredients

  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tbsp oil (avocado, vegetable)
  • 2 tsp. minced ginger
  • 2 garlic cloves, minced
  • ¼ tsp. red pepper flakes
  • 1 lb. broccoli florets
  • 1 red pepper
  • 1/2 cup of onions
  • 10 oz. sliced mushrooms (Shiitake, Oyster, Enoki) 
  • ¼ cup water
  • ½ tbsp toasted sesame seeds, to garnish

Instructions

  • In a small mixing bowl, mix together the soy sauce, vinegar, and sugar until the sugar completely dissolves.
  • In a large non-stick skillet, heat your oil over medium-high heat. Then add the garlic, ginger, and red pepper flakes. Cook for about 30 seconds.
  • Add the broccoli, sliced onions and peppers, mushrooms, and water. Stir-fry for about 5-7 minutes, or until the veggies start to brown and reach the desired texture.
  • Add the soy sauce mixture and cook for another minute.
  • Sprinkle the Broccoli and Mushroom Stir-fry with toasted sesame seeds and serve.

Notes

*Each mushroom will have different cooking times to desired texture. Enoki take much less time than Shiitake and Oyster mushrooms.
